Like any living industry going through transformation, bars have had to adapt to these new demands from customers who are not only looking to have fun, but also to take care of themselves. I’ve heard about a new trend of going out partying and coming back sober, and I find it fascinating. I believe some things are changing, and the bar industry has reached a turning point where we must readapt in order to satisfy these needs by moving toward alcohol-free options, where creativity takes on new directions. How are guests’ expectations around mindful or moderate drinking changing, and how is this influencing menu development at the hotel?I see more and more people every day choosing alcohol-free options and becoming curious about non-alcoholic alternatives. Many times, they are surprised to discover spirits that have achieved flavours very similar to the original alcoholic versions. Most guests still continue to choose alcoholic options, but those who don’t feel very grateful to find a dedicated mocktail section with a variety of flavours. What do you look for when creating or curating low and no‑alcohol drinks to ensure they feel just as considered and special as classic cocktails?What I specifically look for when creating a mocktail is the quality of the flavour. Many non-alcoholic drinks lack personality and taste, and I understand that this can be a bit disappointing. The idea behind each combination is to keep it rich in flavour and make it as appealing as possible. How important is it that low and no‑alcohol options are integrated seamlessly into the wider drinks offering, rather than treated as an afterthought?I believe it is extremely important to dedicate a significant space on the menu to non-alcoholic options. Why? Because I feel that walking into a bar should not be an invitation to consume only alcohol. Years ago, if someone ordered a drink without alcohol or with low calories, they would probably have been met with a look of surprise. As a result, people limited themselves to consuming only what the menu offered. Nowadays, no one should feel bad about choosing to drink a mocktail or being the designated responsible driver. In fact, quite the opposite. I feel happy to be able to offer a menu with varied options and support those who choose alcohol-free alternatives. From your perspective, how can hotels play a role in normalising choice when it comes to drinking, without compromising on experience or enjoyment?The way hotels could support these initiatives would be by offering diverse menus with many inclusive options. Also, choosing a variety of non-alcoholic products and dedicating an exclusive space to them within the bar would be very helpful. A visible area where interested guests can easily access a wide range of choices.Many times, people feel forced to consume alcohol simply because there are no alternatives available, and that can feel limiting.
